<h3>From SUPER IMMUNITY SECRETS ~</h3>
<p>TIME: prep 10 minutes, cooking 2 hours<br />
Heat big soup pot with 2 quarts water<br />
ADD<br />
• 1 large Onion chopped<br />
• 2-3 1” chunks raw Ginger Root<br />
(remove opt)<br />
• 3-4 peeled, sliced Cloves Garlic<br />
• 1 heaping tablespoon Dried Oregano<br />
• 1 heaping teaspoon Curry Powder<br />
• 1/2 tsp Cumin<br />
• Few needles Rosemary<br />
• 1/2 tsp med Red Chili powder<br />
• 1 tsp crushed Red Chili<br />
• 1/2 tsp Sea or Earth Salt<br />
• 1/2 &#8211; 2/3 cup Pearled Barley<br />
• 1/4 cup Amaranth (opt)<br />
• 1-2 large Carrots diced<br />
• 2-3 medium Potatoes – 1/2&#8243; chunks<br />
• 1 large can (28 oz.) diced Tomatoes<br />
Simmer 1  3/4hrs. Last 5-10 minutes add<br />
• 2 cups frozen mixed veggies<br />
• 2-3 T Virgin Olive Oil<br />
• 2 T natural Soy Sauce<br />
• 1 tsp Umeboshi Plum Vinegar<br />
Just before serving stir in<br />
• Medium bunch Parsley chopped fine</p>
<p>Serve with fresh baked bread for the<br />
hungry ones; save room for seconds!<br />
A favorite healing meal &#8211; adapted from soup<br />
Mom used to make. She made it with a meat<br />
bone, which you could do depending, on<br />

<h2>BLACK BEAN or QUICK BLACK BEAN SOUP</h2>
<h4>~ SUPER IMMUNITY SECRETS ~</h4>
<p>TIME: prep 15 minutes, cooking 6 hrs<br />
SHORTCUT – with canned beans = 3/4 hr cooking<br />
BLACK BEANS SOAK 12 hours before soup making<br />
* Soak 4 cups dry Black Beans for 12 hrs to start sprouting process, then simmer in<br />
broth below for 6-8 hrs on low heat or in crock pot.<br />
* OR QUICK BLACK BEANS: use 2 large cans (28 oz) simmer 1 hr.<br />
BROTH with Super Immunity Ingredients<br />
• 4 quarts water<br />
• 1 large Onion, peeled, diced<br />
• 4 cloves Garlic, peeled, diced<br />
• 2-3 large chunks Ginger root (remove after cooking)<br />
• 2 heaping Tablespoons Oregano<br />
• 1 heaping teaspoon Curry powder<br />
• 1 teaspoon Cumin<br />
• 1 teaspoon Green and/or Red Chili powder<br />
• 1 teaspoon crushed Red Chili<br />
• 1/2 cup chopped Green Chilies (if available)<br />
• Few sprigs Rosemary<br />
Add either the soaked or canned Black Beans (simmer 1<br />
hour w/canned, or 6-8 hrs. over low heat or in crock pot<br />
till tender if using fresh soaked beans).<br />
Add more water while cooking to keep up the broth.<br />
When done cooking, turn off heat. Remove chunks of ginger<br />
Blend at least 4 cups of beans and broth in blender and return to pot to make thicker stock;<br />
blend about 1 c at a time, hold lid with dish towel, slow speed, caution hot.<br />
Then add:<br />
• 1 bunch fresh Cilantro, chopped<br />
• 1 yellow, red or orange Bell Pepper, seeded and chopped<br />
• 1-2 T natural, organic Soy Sauce<br />
• 2-3 T cold pressed, virgin Olive Oil</p>
<p>Stir well and taste. Yum!Top with Green Onion, thinly sliced. Non-dairy or regular Organic yogurt.<br />
<strong>SERVE</strong> with Salad of fresh, organic chopped cabbage, diced tomatoes, chopped green onion, dill weed, dressed with fresh lime juice, olive oil and Umeboshi Plum Vinegar.</p>

<h2><strong>Healthy Fats vs Fat Free and Beneficial fats such as  Olive Oil and Coconut Oil</strong></h2>
<p>We often have to educate ourselves to eat healthy fats  such as olive and coconut oils again &#8211; in a culture that has gone crazy about “fat free.” Healthy fats are essential to hormone production and vital functions of body, brain, nerves, hair and skin, as discussed in this video on <a title="Vegetarian Weight Loss Video" href="http://www.youtube.com/watch?v=WOpFzfBieuo" target="_blank">Vegetarian Weight Loss</a>. We may have a distorted view of fat in the diet because we live in a culture where there is too much saturated and trans fat in many foods used for flavor, filler and to get us &#8220;addicted.&#8221;If we&#8217;re health conscious we want to get away from these things &#8211; yet need to re-educate ourselves to consume healthy fats.</p>
<p>Let&#8217;s take a look at:</p>
<ul>
<li>healthy fats: olive oil and coconut oil</li>
<li>fat relating to weight loss and nutrition</li>
<li>fats to avoid such as trans and saturated fats, margarine and commercial vegetable oils</li>
</ul>
<p>We require regular intake of healthy fats to create energy and burn the “bad” fat. This becomes particularly noticeable when we lower our intake of animal foods. Often we think we need protein when what we really need is healthy fat. Olive oil and avocado contain mono-saturated oils, which science is now demonstrating lower &#8220;bad&#8221; LDL cholesterol and raise the &#8220;good&#8221; HDL. Here is a <a title="Salad with Raw Foodist Dennis" href="http://www.youtube.com/CaryEllisLifestyle#p/a/u/1/XRvntyNRyhA" target="_blank">great salad recipe with raw foodist Dennis</a>, age 63, using virgin olive oil and avocado.</p>
<p>Scientists have identified a compound in olive oil called oleuropein which prevents the LDL cholesterol from sticking to the inside of arteries, thus lowering blood pressure and reducing the risk of heart attack.  Olive oil has shown through many generations and ancient tradition in the Mediterranean to be at the core of health producing dietary practices with statistically lower incidences of cancer and heart disease. <h2>Coconut Oil &#8211; Many Benefits</h2>
<p>Coconut oil was given a bad rap in the 1950s when research was being done on saturated fats. What we really need to avoid like the plague is processed fats such as shortening and margarine &#8211; which contain trans-fat and are large contributors to Alzheimers and cardiovascular disease.<img src="file:///Users/appleadministrator/Library/Caches/TemporaryItems/moz-screenshot-2.png" alt="" /><img src="file:///Users/appleadministrator/Library/Caches/TemporaryItems/moz-screenshot-3.png" alt="" /></p>
<p>Coconut oil contains monolauren, a fatty acid that has antiviral antibacterial qualities, and is effective against microorganisms such as candida. It contains medium chain fatty acids and is absorbed and burned for energy, rather than going to storage in the fat cells. Monolauren is thought to improve cognitive function in type 1 diabetes and hypoglycemia, as well as improve cardiovascular health.<br />
Coconut oil has also been found to have a positive effect on the thyroid, raising metabolism for leanness and weight loss.  Be sure to buy the most natural, cold processed coconut oil and olive oil.<br />
You will find these beneficial fats make your soups much more tasty, nourishing and sustaining.  I often add them near the end of cooking time so they are basically raw when we eat them; however it’s also beneficial to add some during cooking time as the oil assists to draw some of the compounds to be more available from the herbs and spices. Toasted sesame oil adds a wonderful flavor and is part of the macrobiotic tradition. Shown to be beneficial for heart and kidneys it contains antioxidants, is protective of DNA, raises interleukin levels (disease fighting component of the blood), and is cancer protective particularly agains skin cancer and leukemia.</p>
<p>Natural food science sheds a new light beyond traditional eating practices.We should be very cautious around the consumption of margarine, a hydrogenated fat containing nickel, particularly clogging to arteries, and though most cooking oils are polyunsaturated, they are <a title="Toxic Cooking Oils" href="http://www.welikeitraw.com/rawfood/2006/03/toxic_cooking_o.html" target="_self">very toxic to the system</a>. <p>ABOUT DAIRY &#8211; If you consume dairy, please BUY ORGANIC. If you haven’t yet seen it, watch the Michael Moore movie, The Corporation. This movie has great insights on disease in commercial dairy production and manipulation of information by the food producers associations. Again, vote with your grocery bill when you can for organic food; it may cost a little more now but less in the long haul. Organic dairy products are high in CLA, conjugated linoleic acid, important to helping the body burn fat and preserve muscle tissue as noted in <a title="CLA burns fat preserves muscle" href="http://thyroid.about.com/cs/dietweightloss/a/cla.htm" target="_blank">this article</a>.</p>

<p>I&#8217;ve always felt it&#8217;s important to know basic first aid. I&#8217;ve generally been trained in First Aid, CPR and as a Wilderness EMT. This is a great simple advancement of traditional CPR that anyone could do if confronted with a cardiac emergency. It may be helpful if several people can quickly trade off until the EMT 911 team arrives.</p>

<p>Our doggies love it &#8211; they went out with me to shovel paths through hip deep snow.  It took snowshoes just to get around&#8230; We&#8217;ve figured out 11 month old Daisey is a Golden Retriever / Great Pyrenees mix. She adores the snow!!!</p>

<p>Here&#8217;s the dome greenhouse we put up this fall covered with snow &#8211; and yet it&#8217;s warm inside with lots of organic greens and herbs growing. It is kept warm only by a big water tank that helps keep ambient temperature and being partly underground. Will have a video soon on these wonderful dome greenhouses!</p>

<h3><span style="color: #800000;"><strong>1. Buy Local Organic: reduce transportation and production costs, eat healthier, support your local economy, vote with your fork</strong></span></h3>
<p>As fuel prices rise in the coming year (I&#8217;ve heard $4/gallon predicted) so will costs of transportation and production. It might take a little research to find out where you can purchase local, organic food, but it&#8217;s an empowering way to fight back. Ride a bike to the farmers market, ask around, get to know the neighborhood. Free yourself from dependency on the supermarket.</p>

<p>We could argue all day about whether we should eat meat or become vegetarian. The truth is we must be authentically ourselves, and walk the path to which we are drawn. Those raised eating meat might like to change, yet it may seem a difficult proposition. Others have become vegan or vegetarian, all raw or cooked, and find it joyful and fun to follow a plant based diet.</p>
<p>There is no reason to judge what someone chooses to eat; for we will grow and change as we become ready. Meanwhile the facts demonstrate reducing use of animal foods can make us more healthy and the Earth, too! If you&#8217;re not ready to give up meat, try going vegetarian 2-3 days per week, buy organic and to offset the extra cost, eat less.</p>

<h2>Research Warns Antibiotic Use in Animals Now Creating Drug Resistance in People</h2>
<p>An unbelievable 75% of 35 million pounds of antibiotics used in the US last year went to pigs, chickens and cows &#8211; and guess where they end up? On the plates of meat eaters. The animals are fed antibiotics both to keep them healthy and to make them grow faster. But all this overuse of antibiotics is creating drug resistant organisms. &#8220;Researchers say the overuse of antibiotics in humans and animals has led to a plague of drug-resistant infections that killed more than 65,000 people in the U.S. last year &#8212; more than prostate and breast cancer combined.&#8221;</p>
<p>Even the White House and World Health Organization now recognize growing threat of drug resistant strains of staph, malaria and tb to be an &#8220;urgent&#8221; issue. Attempts to regulate over-use of antibiotics on farm animals is being fought by pharmaceutical companies to the tune of $200 million and by powerful lobbies of interest groups.</p>
<h2>Prudent to Become a Vegan or Vegetarian or Buy Only Organic</h2>
<p>One way to protect ourselves from being overdosed with antibiotics is to change our diet, reduce consumption of animal products, or at least vote with our fork and support the farmers who have committed to growing only organic.</p>
