So simple yet so delicious…from Buddhist temples of Asia we hear ancient (((gong))) calling to prayer… ah yes, enjoy this easy vegan soup recipe with immune system spices from Oriental tradition, with chopsticks, sip the broth, feel your head clear…It’s amazing that something as simple as soup can have such a powerful effect to cleanse and nourish.

This is one reason for the traditional “chicken soup” for a cold, but you’ll find this a better choice as leaving out animal foods will hasten healing. BROTH: Start in large soup pot with 2-3 quarts water.

Add the following Super Immunity ingredients:
1 large Onion, peeled, diced
4 cloves Garlic, peeled, diced
2-3 large chunks Ginger root (remove after cooking)

2 heaping Tablespoons Oregano
1 heaping teaspoon Curry powder
1 teaspoon Cumin
½ teaspoon Green and/or Red Chili powder
1 teaspoon crushed Red Chili
1 teaspoon Dill Weed

Simmer ½ hour or so till ingredients are melded.
Turn off heat.

Add about 4 cups of fine Rice Noodles (generally sold in the oriental section of your market/ or natural food store). Break them up with your hands to make easier to eat. If you use fine noodles they just need to soak in the hot broth (not cook).

If you are using a heavier noodle you may need to simmer a few minutes with the noodles. If you don’t have rice noodles, feel free to replace with any pasta and simmer for the length of time suggested.

Add and stir in:
1 bunch fresh organic Spinach, wash, chop a little

½ bell pepper diced (red, orange or yellow)
½ bunch chopped fresh Cilantro

1-2 T natural, organic Soy Sauce
2 T cold pressed, virgin Olive Oil
1 t ume plum vinegar if you have it

Sprinkle with a little thinly sliced Green Onion

TASTE AND SERVE with lime wedges and a fresh cucumber/seaweed salad, or fresh salad of your choice
