BLACK BEAN or QUICK BLACK BEAN SOUP

~ SUPER IMMUNITY SECRETS ~

TIME: prep 15 minutes, cooking 6 hrs
SHORTCUT – with canned beans = 3/4 hr cooking
BLACK BEANS SOAK 12 hours before soup making
* Soak 4 cups dry Black Beans for 12 hrs to start sprouting process, then simmer in
broth below for 6-8 hrs on low heat or in crock pot.
* OR QUICK BLACK BEANS: use 2 large cans (28 oz) simmer 1 hr.
BROTH with Super Immunity Ingredients
• 4 quarts water
• 1 large Onion, peeled, diced
• 4 cloves Garlic, peeled, diced
• 2-3 large chunks Ginger root (remove after cooking)
• 2 heaping Tablespoons Oregano
• 1 heaping teaspoon Curry powder
• 1 teaspoon Cumin
• 1 teaspoon Green and/or Red Chili powder
• 1 teaspoon crushed Red Chili
• 1/2 cup chopped Green Chilies (if available)
• Few sprigs Rosemary
Add either the soaked or canned Black Beans (simmer 1
hour w/canned, or 6-8 hrs. over low heat or in crock pot
till tender if using fresh soaked beans).
Add more water while cooking to keep up the broth.
When done cooking, turn off heat. Remove chunks of ginger
Blend at least 4 cups of beans and broth in blender and return to pot to make thicker stock;
blend about 1 c at a time, hold lid with dish towel, slow speed, caution hot.
Then add:
• 1 bunch fresh Cilantro, chopped
• 1 yellow, red or orange Bell Pepper, seeded and chopped
• 1-2 T natural, organic Soy Sauce
• 2-3 T cold pressed, virgin Olive Oil

Stir well and taste. Yum!Top with Green Onion, thinly sliced. Non-dairy or regular Organic yogurt.
SERVE with Salad of fresh, organic chopped cabbage, diced tomatoes, chopped green onion, dill weed, dressed with fresh lime juice, olive oil and Umeboshi Plum Vinegar.
