Awesome Kale Salad

One of the best fall foods is cool weather kale that will grow in gardens well into snowfall. Adding greens to your diet is an important key to overall health. These greens are protective against cancer and other degenerative diseases.

Raw Kale and Pear Salad

Ingredients
1 lb Lacinato kale (aka: Cavolo Nero, Dinosaur kale), cut crosswise in very thin slices
1 clove garlic, minced
1/4 cup basil, diced
2 tbsp mint, diced
1 onion, coarsely chopped
1 tbsp butter
3 tbsp olive oil, divided
1 tbsp honey
2 pears, diced
cinnamon, to taste
juice of 1 lemon
3 tbsp white or red wine vinegar
salt and pepper
